My kids LOVE pancakes! So to make them a little healthier, I make them out of oatmeal and wholewheat or spelt flour. These pancakes come out pretty dense and full of flavor!

1 c oat flour. Don’t have any? Blend oats in the blender. Ta-dah!

1 c whole wheat/spelt flour

1.5  tbs of baking powder

1 tsp baking soda

pinch of salt

2 tsp cinnamon

1 tsp vanilla or almond extract

2 tsp melted coconut oil

2 cups of almond/soy/alternative milk

2 ripe mashed bananas

Combine all of the dry ingredients together. In a separate bowl, combine all of the liquids together and then add it to dry mix.

Heat a large skillet over medium high heat and add coconut oil (or preferred oil) to coat the bottom. Pour 1/4 cup of pancake mixture and cook for about 3 minutes each side, or until it starts to bubble.

Makes about 10-12 pancakes
