Hi loves! I’ve been running a “plant based challenge” group on Facebook and it’s been wonderful! We’ve gone over nutrition, recipes, how to eat a plant based diet on the go, and so much more. My kids LOVE pancakes! So to make them a little healthier, I make them out of oatmeal and wholewheat or spelt flour. These pancakes come out pretty dense and full of flavor! 1 c oat flour. Don’t have any? Blend oats in the blender. Quinoa Pilaf 2 tbs extra virgin olive oil 1/2 c chopped red onion 1 c shredded or cubed carrot 1 c quinoa 2 cloves minced garlic 2 c water 2 tsp tamari or low sodium soy sauce 1/2 c thawed frozen peas or if you ‘re like me and don’t like them, broccoli 1.
